As the weather heats up, I like to enjoy Green Tea and White Tea over ice. These teas are deceptively simple, refreshing, and have a wonderful flavor.
My favorite method of making iced tea with green and white teas is a cold brew. This entails no hot water. You simply add the correct amount of tea to your container or glass, add the coldest water possible, and pop it in the fridge for 20-30 minutes. If you don't want to wait, like me, this method is for you. It is fast.
Cold brewing gives excellent flavors with no bitterness.
Another perk of this method is that if you have cold-brewed your tea in one of my tea tumblers or iced tea makers, you don't have to remove your tea leaves when your tea is done steeping. You won't experience any bitterness by leaving your leaves in it since you've used cold water.
You can usually get two, sometimes three steepings from the same set of leaves. Once your thirst-quenching tea is gone, just add more cold water, and you're good to make another batch of fabulous iced tea.
If you've never done a cold brew, I highly recommend you give it a try. I'm pretty sure it'll become your go-to method.
A distinct difference between cold-brewing green and white teas versus black or oolong teas is that the flavor profile stays true to taste. However, blacks and oolongs can taste very differently between the hot and cold brew versions.
