Two New Organic Teas From Nepal

Organic Kathmandu Valley Green Tea is the perfect start for anyone new to green tea. Its sweet, fruity, mellow, and smooth taste with hints of roasted nuts and vegetal notes won me over at first taste.

Organic Kathmandu Valley Green Tea

Organic Kathmandu Valley Green Tea was one of the first green teas ever produced in Nepal. It has a unique production process I thought you might enjoy learning about.

The carefully hand-plucked tea leaves are brought into the factory and allowed to sit briefly before being directly heated through the dryer. This crucial step halts any oxidation process that might occur.

The half-dried tea is then transferred to a rolling machine that breaks the cell walls of the leaves, allowing them to release essential oils. Unlike other green teas, the rolled tea rests for a while to be re-dried at the peak of its aroma.

The tea is then broken down through a crushing process and sorted through three machines. This helps gather the finer parts of the tea leaves, separate the stems and flakey leaves, and grade them according to size.

Finally, the tea is hand-sorted, creating multiple grades of the same tea.

This premium organic white tea is made with one tender leaf and a bud hand-plucked during Spring and Summer (First Flush and Second Flush). Unlike other white teas, which undergo virtually no processing, Organic Silver Himalayan White Tea follows a short process.

Depending on the weather conditions, the tea leaves go through natural withering for a few hours.

Once the leaves are sufficiently soft, they are rolled under low-medium pressure. This quick 8-10 minute rolling process allows the tea leaves to ooze out some of their essential oils, filling the room with an amazingly fresh floral aroma that is captured and locked in through the drying process. This is what gives this tea its unique flavor.
